Then all the water frozen and only the rich, sweet extract is pressed out of the grapes. Only in years when the weather cooperates is it possible to harvest grapes for an Eiswein. The earlier a hard frost, the better, because the grapes must be healthy in order to produce a crysal-clear, brilliant wine. Clarity is an essential feature of an Eiswein. An Eiswein can (and must) age for decades for its full splendor to unfold. Our 1998 Hattenheim Engelmannsberg Eiswein is a perfect example: crystal clear, with a smooth acidity, it is virtually an explosion of tropical fruit. After 15 years in the bottle, it is now really beginning to offer pleasure. It goes without saying that this wine still has tremendous potential and can be aged for many years to come.
