Wine of the month: November 2011

Balthasar Ress, who founded the estate bearing his name in 1870, used the designation “Von Unserm” to denote particularly choice wines. To this day, we’ve carried on this tradition.

The grapes for this Pinot Noir are picked very selectively by hand and quite late during the harvest. After gentle pressing and juice extraction to increase concentration between juice and skins, the wine is aged eight months in stainless steel tanks and barriques – a particular feature of the “S” version of “Von Unserm.”

Profile and food affinity: This 100% Spätburgunder is marked by the pronounced aromas of stone fruit. Rich in extract, the wine’s fruit is rounded off by a harmonious acidity. Enhance a beautiful autumn day with a bottle of “Von Unserm S” Pinot Noir. It’s a perfect choice, for example, with chateaubriand, medium rare, served with béarnaise sauce.

“Von Unserm S” is a dry wine produced in a traditional manner and designed to meet high expections – it is the “calling card” of the estate!
