Tell us a bit about your house.

 

After years of painstaking renovations, Eltville's oldest town hall opened its doors as ELTVINUM: a restaurant, hotel, and vinothek. We have seven individually furnished hotel rooms in the two stories above the Vinothek and restaurant (seats 50 indoors and 30 outdoors on the terrace). With their fascinating mix of traditional and modern architecture, our rooms offer an ideal setting for a changing menu of contemporary and classic cuisine.

 

 

What is the philosophy of your house?

 

We took over ELTVINUM on 15 June 2013 and since then, we've tried our best to revitalize it with a fresh start. We like the combination of hotel, restaurant, and vinothek. It enables us to reach a broader audience and offer something for every occasion. It's very important to us that our guests feel comfortable from the moment they arrive...whether it's simply for a glass of wine in the vinothek or a multi-course meal in the restaurant. We want our guests to enjoy an uncomplicated visit with good food and drinks.

 

 

What do you particularly enjoy about working with wine?

 

It's nice to see how guests really relax over a glass of wine and how much they enjoy it. We actively promote the diversity we offer in order to tempt them to try something something different.

 

 

How did your contact with Balthasar Ress come about and what do you like about us and our wines?

 

We met Ms. Baumgärtner and Ms. Diepenbrock in our previous position, so we had two super contacts right from the start. We've been fans of the estate's creative, professional marketing for a long time and we know quite a few enthusiastic wineBANKers. The first tasting with Dirk Würtz und Ms. Baumgärtner was a "WOW" experience. The lively, powerful presentation was a super help in getting us reacquainted with Rheingau wines and we were impressed by the commitment and passion they conveyed. The Hattenheimer Engelmannsberg and "Von Unserm" Rieslings convinced us immediately and therefore, they were the first on our wine list. The Balthasar Ress collection is simply very unusual and different.

 

 

What have you always wanted to tell us as a wine estate?

 

On our next menu, we're going to recommend the Riesling "Von Unserm" as a contrast to our more flavorful dishes, such as gilthead sea bream on beet and rhubarb confit.
